Recipes with stories are always fun - and this recipe definitely has a story! It shows just how our collective creative minds work...
We decided we wanted to d a month of "salads" because, well - it's becoming summer and salads are really popular during the summer months. We had planned a couple, and decided we wanted to do a Spinach salad. Having a whole store as your pantry really helps, but sometimes the exact opposite happens - being overwhelmed by choices.
Before wandering the store, we had semi-decided on a few of the ingredients, but when we got to the produce area, the mache caught our eye. Over the course of time, we've used most of the various salads and greens in the store, but we hadn't used the mache. Picked up a bag. Then we started playing.
Here's the very tasty result!
- Mache salad (or your favorite lettuce)
- Chevre (or your favorite cheese)
- Spiced pecans (or your favorite nuts)
Dressing:
- 1/4 cup Vidalia Onion Relish
- 1/2 cup Olive Oil
- 2 tsp Dijon Mustard
- 21 Seasoning Salute and salt to taste
Whisk dressing ingredients together and toss with lettuce, cheese, and nuts!
Note: Add dressing right before serving as the delicate mache breaks down quickly.
