Mardi Gras Red Beans and Rice

 

  • 1 cup Onion, diced
  • 1 cup Trader Joe's Mélange a Trios (frozen bell pepper blend) diced
  • 1 cup Celery, diced
  • 1 tsp Garlic Powder
  • Butter or olive oil
  • 2 Cans Trader Joe's Kidney Beans
  • 1lb Sliced Andouille Sausage
  • 1 cup Water
  • Salt and pepper to taste
  • Trader Joe's Hot Sauce to taste

1 box Trader Joe's Rice and Orzo Pilaf

Sauté the onion, bell pepper, garlic and butter until the vegetables are soft. (about 3-4 minutes) Add the two cans of Trader Joe's Kidney Beans, water and sausage to the pot and stir over medium heat. (Do not over heat as beans will scorch and burn on bottom) Serve over Trader Joe's Rice and Orzo Pilaf.  Serves 4 to 6.
